Sous Chef

Connor Shaw was born and raised in the Ozarks, where family cooking traditions first sparked his passion for the culinary world. From an early age, the kitchen became more than just a place to prepare meals — it became a place to connect with others, work hard, and create experiences that bring people together. Connor values consistency, teamwork, and a strong work ethic, and he takes great pride in creating meals that make people feel cared for. At Velocity Health Group, Connor serves as Sous Chef, where he combines his passion for food with his desire to positively impact the lives of others.

Connor began his culinary career washing dishes at a small pizza restaurant in Aurora, Missouri. That early experience quickly grew into a deeper passion for restaurants and hospitality, ultimately leading him to pursue his Associate’s Degree in Culinary Arts from Ozarks Technical Community College in 2021. Following graduation, Connor stepped into his first Sous Chef role at Progress, a seasonal tasting menu concept in Springfield, Missouri, where he refined his understanding of seasonal cooking, vegetable-forward cuisine, and ingredient-driven menus.

Connor later moved to Chicago to work at a Two Michelin Star tasting menu restaurant, where he spent a year and a half sharpening his culinary technique, learning advanced flavor development, and developing a strong appreciation for precision and detail in fine dining. Most recently, he served as Sous Chef at a private business club in Boulder, Colorado before joining the team at Velocity.
Outside of the kitchen, Connor enjoys spending time outdoors hiking, floating, and walking his dog. He also enjoys playing pool, guitar, and basketball whenever he gets the opportunity. Above all, Connor values time with his family and loved ones and enjoys creating comforting meals at home for those closest to him.
